Ingredients
- Chicken Wings – 4-5 pieces, seasoned (see seasoning details below)
- Fresh Greens – 1 cup of arugula or mixed salad greens
- Cucumber – 1 small cucumber, sliced into rounds
- Tomato – 1 large, sliced
- Mandarin Oranges – 1 mandarin, peeled and separated into segments
- Olive Oil – 1 tablespoon, for dressing
- Salt and Black Pepper – to taste
- Dried Herbs (optional) – oregano or basil for seasoning the tomatoes
For the Chicken Wing Seasoning:
- Salt and Pepper – to taste
- Paprika – 1 teaspoon
- Garlic Powder – 1/2 teaspoon
- Onion Powder – 1/2 teaspoon
- Dried Oregano or Italian Seasoning – 1/2 teaspoon
- Olive Oil – 1 tablespoon
Instructions
1. Season and Cook the Chicken Wings
- Preheat your oven to 400°F (200°C).
- In a bowl, toss the chicken wings with salt, pepper, paprika, garlic powder, onion powder, oregano (or Italian seasoning), and olive oil until well-coated.
- Place the wings on a baking sheet lined with parchment paper or foil.
- Bake for 25-30 minutes, flipping halfway through, until the wings are golden-brown and crispy.
2. Prepare the Salad Base
- Arrange the fresh greens on a large plate or bowl as the base.
- Add cucumber slices and mandarin orange segments around the plate.
- Place the sliced tomato on top, and sprinkle with salt, black pepper, and optional dried herbs for extra flavor.
3. Assemble and Dress
- Once the chicken wings are cooked, arrange them on the salad.
- Drizzle a bit of olive oil over the salad for a light dressing.
- Optionally, add a squeeze of lemon juice for a bit of tanginess.
Serving Suggestion
This salad is best enjoyed fresh and can be served as a complete meal for lunch or dinner. Pair it with a slice of crusty bread or a light vinaigrette if you like a bit more dressing.
