Fried Chicken Wings & Summer Salad

Ingredients

  • Chicken Wings – 4-5 pieces, seasoned (see seasoning details below)
  • Fresh Greens – 1 cup of arugula or mixed salad greens
  • Cucumber – 1 small cucumber, sliced into rounds
  • Tomato – 1 large, sliced
  • Mandarin Oranges – 1 mandarin, peeled and separated into segments
  • Olive Oil – 1 tablespoon, for dressing
  • Salt and Black Pepper – to taste
  • Dried Herbs (optional) – oregano or basil for seasoning the tomatoes

For the Chicken Wing Seasoning:

  • Salt and Pepper – to taste
  • Paprika – 1 teaspoon
  • Garlic Powder – 1/2 teaspoon
  • Onion Powder – 1/2 teaspoon
  • Dried Oregano or Italian Seasoning – 1/2 teaspoon
  • Olive Oil – 1 tablespoon

Instructions

1. Season and Cook the Chicken Wings

  • Preheat your oven to 400°F (200°C).
  • In a bowl, toss the chicken wings with salt, pepper, paprika, garlic powder, onion powder, oregano (or Italian seasoning), and olive oil until well-coated.
  • Place the wings on a baking sheet lined with parchment paper or foil.
  • Bake for 25-30 minutes, flipping halfway through, until the wings are golden-brown and crispy.

2. Prepare the Salad Base

  • Arrange the fresh greens on a large plate or bowl as the base.
  • Add cucumber slices and mandarin orange segments around the plate.
  • Place the sliced tomato on top, and sprinkle with salt, black pepper, and optional dried herbs for extra flavor.

3. Assemble and Dress

  • Once the chicken wings are cooked, arrange them on the salad.
  • Drizzle a bit of olive oil over the salad for a light dressing.
  • Optionally, add a squeeze of lemon juice for a bit of tanginess.

Serving Suggestion

This salad is best enjoyed fresh and can be served as a complete meal for lunch or dinner. Pair it with a slice of crusty bread or a light vinaigrette if you like a bit more dressing.
